Cajun Fish & Chips

Published Feb 11, 2026

We invited Chef Brady Foster to prepare a special meal in honor of Black History Month. Chef Foster chose Cajun Fish & Chips as a tribute to a meaningful tradition in many African American communities. Fish fries have long served as fundraisers for schools and community needs, bringing people together around food, fellowship, and shared purpose. Growing up in Gary, Indiana, Chef Foster remembers working Fridays at a fish market. “My father broke down the fish. I fried the fish,” he shared. After long, demanding work weeks, Friday fish fries were something families looked forward to. You can visit Foster’s Café inside Ivy Tech Community College at Fort Ben. 9301 E 59th St.
